Achar / Edith's Sambal

I bought a big bag of chillies out of poor memory. I thought I needed 400g of chillies for a recipe but ended it needed only 4 pcs.


I am now getting phobia of throwing food out. So in order not to have food wastage, I churn some achar and sambal.


Well, last week, I had a craving for achar so we went to my favourite Roast Pork/Char Siew stall for our dinner fix. This stall has a special touch, instead of the usual cold cucumber slices, it is replaced with achar and I love their achar.


With my craving, hubby ordered extra serving of achar and guess how much was it? S$1 for a tiny packet, I was shocked! I think it was only one tablespoon full!


Even though I like theirs, I was so adamant to make my own achar after that.

Why did I take such a long time to decide to make my own? Well, I had a big time failure the last time I tried. Very ambitious, I bought tons of vegetables but ended up throwing the whole lot away. The recipe was totally unreliable! Guess it become a phobia.


So this time, I chose one from Sugar and Everything Nice. I was less ambitious this round, even fact, I was so timid that I actually minus out lots of other ingredients listed. Sorry J, no hard feelings.


Guess what, now I regretted not making the full whole recipe! It was just so yummy!

As for the sambal, I have asked friends for a good reliable recipe but all told me that they go by estimation and gut feel, thus no recipe for me.

Well so I created my own and I am going to call it Edith's Sambal. hahaha






Am going to share some with PS when we go to her house to check out the gym attire, let’s hope she likes it.
 
Edith' Sambal

What you need:

Grind

300g fresh chillies
40 pcs dried chillies (deseeded and soaked)
6 kaffir leaves (thinnly shred)
6 shallots
6 garlic
1 inch belachan (toasted)

Season

1 tsp of lime zest
1 tsp of salt
1 tbsp of sugar

Method:

In a hot wok, add 6 tbsp of oil.

Add in grinded ingredients and slowly fry till it turned to a nice deep tone.

Seasoned with lime zest, salt and sugar.

Continue to cook for about 10 mins.

Cool and store in airtight container.

Add a dash of lime juice before serve.

Penang Achar
Ingredients to be cut:

1.25kg cucumber, half lengthwise, center core removed and cut into 1.5" long strips
1 large carrot, peeled and cut into 1.5" long strips
300g long beans, cut into 1.5" length
500g chinese cabbage, cut into 2.5" square pieces
300g cauliflower, cut into bit size florets
600g roasted peanuts, skin removed, and coarsely grounded
1 Tbsp + 1 tsp salt
450ml white vinegar
180g sugar
500ml cooking oil

Ingredients to be grinded (A):

20 pieces dried chillies soaked to soften
6 red chillies

Ingredients to be grinded (B):

360g shallots, peeled
1 bulb garlic, peeled
1" piece fresh tumeric, peeled
1" piece fresh galangal, peeled
4 candlenuts

Method:

Place cucumber and carrot strips in a bowl. Mix weall with 1 Tbsp salt and leave for 30 minutes. Then wash thoroughly with water and drain. Using a piece of muslin cloth, squeeze out as much water as possible from the vegetable strips.

Half fill a large pot with water, add half of the vinegar and bring to a boil. Add a pinch of salt to the water. Then blanch the vegetables in batches for about 4 minutes. Remove and transfer to a colander, drain well.

Lay the blanced vegetables out in the sun to dry for about 30 minutes. If there is no sun, place them under a fan to dry out for about 90 minutes

Heat a large wok or large frying pan. Add the oil and once hot, fry ground ingredients (A) for 2 minutes. Then add in ground ingredients (B) and fry until fragrant and the oil separates - about 10 minutes. Add remaining vinegar, sugar and 1 tsp of salt. Stir in the peanuts and mix thoroughly.

Last add in the vegetables and stir well. Keep acar overnight in the refrigerator for the flavours to develop. To serve, dish out and add a sprinkle of toasted sesame seeds.

* Acar can be kept in the refrigerator for about 2 weeks.

Tofu Cheesecake with home made berries jam / Home made berries jam

I have started my apple cider detoxing two nights ago. Definitely a good excuse to do that as I had been over eating during the New Year period. With the Lunar New Year approaching, I really need to detox to make room for Lunar New Year goodies. hahaha....

Whenever I go to IMH, there is this super duper weighing machine that I never failed to check it out and watching my weight increasing steadily is not very fun especially my kids will constantly tease me.

So for tonight's dessert, I make a non bake Tofu Cheesecake with home made berries jam.






I really love the Home Made Berries Jam along with this tofu cheesecake. It definitely adds some flavour to it.




My son who doesn't really like wobbly or creamy dessert didn't reject this. As for my girl, she naturally had her second helpings. I really have to watch this little one. She goes for quantity and not quality. As my hubby's saying with regards to food, what comes what dies. So I am very lucky to have two not fussy eaters at home for this moment.

Am glad that hubby had a taste of it before he goes off.

What you need:

233g strawberries
171g blueberries
120g sugar
2 tbsp lemon juice

Method:

Boil the berries, sugar and lemon juice at medium fire.

Once boil turn to low fire.

Stir constantly all the time. When it starts to boil and bubble form, scoop away the bubbles.

Keep boiling at low fire till the mixture become thickens.

The mixture will be a little runny when hot but will set after it cool off.

Pour the hot jam into sterilised jars. Secure tight leave cool then keep in the fridge.

Notes: need to use a wooden spoon to stir.
