Is she going to be a star?

Today my little 33 months old baby is going to perform in a mini concert in school. She has just completed one term in playgroup. So far, she faired very well.


As this is a potluck party, my contribution is Butter Cupcake (using Lee Lee's) but have modified a little.

A change of plan because I wasn't really in the mood to do a Japanese Cheese Cake.


What you need:

250 gm butter (room temperature)
220 gm caster sugar
6 large eggs
1 tsp vanilla essence
300 gm self-raising flour (sifted)
½ cup of evaporated milk (I used fresh milk this time round)


Preheat the oven to 160°C.

Beat the butter with the caster sugar until white and fluffy (7 mins)

Add in eggs one at a time and mix well.

Then add is vanilla essence and evaporated milk and mix well.

Lastly fold in sifted flour into the butter mixture and mix well.

Pour into a greased and lined 9 x 9 inches cake tray and bake for about 30 mins or until cake is done. (May be longer than 30 mins. if cake still not done after you insert the skewer, put back and bake for another 10 mins to try doneness.)


Also, decided to boil another form of liang cha for hubby as he is leaving on Sunday. Lots of spicy food then, so I think I better "cool off" his body system alittle.

This Cane & Arrowroot drink is recommended by my mom who often asked me to standby such thing as the fresh ones might not be available at the market place.


What you need:

A packet of Cane & Arrowroot Stock (Sugar cane, arrowroot, carrot and imperate)
Black sugar to taste


Boil for an hour.
