Boxing Day

Initially we wanted to join in the Boxing Day sales thus I prepared our lunch the night before by using the crockpot.

When we were newly wed, our dinner is usually made via the crockpot. Even though it is just a one dish meal, it is definitely better than eating out. We got so sick of eating out subsequently.

I like this method of cooking because by the time we are home, the food will be cooked and still piping hot. Also the aroma filled the house!

Anyway, we didn't shop as we were so tired and decided to stay in and rest instead. Afterall, we need to send the kids down for taekwondo lesson in the evening. We can use that time to run some errands.

Thus a simple lunch is what I prepared. Crockpot Pork Roast with a mixed of vegetable.

What you need:

4 potatoes, cubed
8 carrots, cubed
1 onion, halved
6 cloves garlic, chopped
2 litres of vegetable broth
1/2 cupca white wine
1 kg Pork shoulder roast
Salt and pepper to taste
6 tbsp flour for thickening (optional)

Place half of the vegetable in the bottom of the crockpot. Sprinkle half garlic.

Pour half of vegetable broth and wine.

Place roast in the croockpot above the vegetable.

Pour the remaining vegetables and broth.

Slow cook for 9 - 10 hours.

Remove meat and vegetable just before serving.

Pour 1 cup of the gravy to the flour and mix till well blended.

Pour the remaining gravy into a pot, bring to boil and season with salt and pepper.

Pour in the flour mixture. Cook till thicken.

Pour thicken sauce over roast meat. Serve hot.
