Happy Birthday Mom!!!

My mom turned 65 today! Besides going out for meal, I decided to bake her a cake instead. As we are going for buffet dinner, hubby said that we might not be able to have cake later. So I split the recipe into half and baked her a small Cream Cheese Brownie instead.

When it was time to frost, my mind went totally blank. I couldn't get any inspiration to decor the cake. Also there was a little mischief from son, thus explain part of the lettering "got hidden".

Sorry Mom, this ain't my best effort but hope you like this one.

This will also be my brother last birthday celebration with my mom in Singapore. I am wondering how she is feeling right now.

What you need

125g butter
300g dark chocolate
100g castor sugar
3 eggs, beaten lightly
110g plain flour
35g self raising flour
1/2 cup sour cream
1 tsp vanilla essence
150g almond bits

Cream Cheese

8oz cream cheese, softened
100g castor sugar
1 tsp vanilla essence
1/2 cup sour cream
3 eggs

Method for cream cheese

Beat cream cheese, sguar and vanilla essence till smooth.

Add sour cream and mix well.

Add eggs one at a time, mixing on low speed until well blended.

Method

Grease and line pan

Melt butter and chocolate (double boil method).

Mix till smooth. Cool to warm.

Stir in sugar, eggs and essence, then sifted flour (put nuts together) and sour cream.

Mix well and spread mixture into pan.

Bake around 180 degree celcius for about 30 mins.

Spread cream cheese and further bake for about 30 min or till center is almost set.

Cool and refrigerate overnight or 4 hours.

Stand cake at room temperature before serving.
