Simply love this

Bought some really fresh Portobello Mushrooms at the supermarket. As today is no meat day (Friday), we had Grilled Portobello Mushrooms with Stuffed Spinach. Healthy choice isn't it?

Result: Awesome lunch!

What you need:

6 Portobello Mushrooms (wipe clean with damp cloth)
Spinach (chopped and rub a little pepper and salt)
1/2 cup grated Cheddar Cheese
1/2 cup grated Mozarella Cheese

Method:

Preheat oven at 200 degrees celsius for 10 minutes. Greased a baking tray with a little vegetable oil. Line the mushrooms on the prepared baking tray.

On each mushroom, put the prepared spinach.

Leave about 1/2 inches round the mushroom, top the stuffed mushroom with the grated Cheddar Cheese on top of the spinach and then Mozarella Cheese.

Baking in oven for 15 minutes.

And then grill for another 5 minutes till the cheese is golden brown.

Serve immediately
